Keto Margarita Shrimp

The fresh cilantro, lime juice, and tequila in these Keto Margarita Shrimp make them taste great. They're easy to make, taste great, and are keto-friendly, so they're great for any event.

Ingredients:

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1/4 cup fresh lime juice

  • 2 tbsp tequila

  • 1/4 cup chopped fresh cilantro

  • Salt and pepper to taste

Instructions:

In a bowl, combine olive oil, minced garlic, lime juice, tequila, and chopped cilantro


Season with salt and pepper


Add the shrimp to the bowl and toss to coat evenly


Marinate for at least 15 minutes in the refrigerator


Heat a skillet over medium-high heat


Add the marinated shrimp and cook for 2-3 minutes per side, or until shrimp is pink and cooked through


Serve hot, garnished with additional cilantro if desired

Melting Potatoes - Kirbie's Cravings

Melting Potatoes are a savory side dish that lives up to its name. The combination of butter, garlic, and thyme infuses the potatoes with incredible flavor, while a splash of chicken broth ensures they're tender and moist on the inside.

Ingredients:

  • 4 large Yukon Gold potatoes

  • 1/4 cup unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 1/2 cup chicken broth

  • Fresh chopped parsley for garnish

Instructions:

Warm the oven up to 260F 500C


Peel the potatoes and cut them into rounds that are 1 inch thick


Put minced garlic, dried thyme, salt, and pepper in a bowl and melt the butter


Spread the butter mixture out over the potato slices


In a baking dish, lay out the potato slices in a single layer


Cover the potatoes with chicken broth


Flip the potatoes over halfway through the baking time of 30 to 35 minutes, or until they are golden brown and soft


Before serving, sprinkle with chopped fresh parsley

Vegan Hibachi Fried Rice

A vegan twist on the classic hibachi-style Japanese fried rice, packed with flavor and vegetables.

Ingredients:

  • 4 cups cooked jasmine rice, cooled

  • 2 tablespoons vegetable oil

  • 1 onion, diced

  • 2 carrots, diced

  • 1 cup frozen peas, thawed

  • 3 cloves garlic, minced

  • 3 tablespoons soy sauce

  • 2 tablespoons vegan butter

  • Salt and pepper to taste

  • 2 green onions, chopped for garnish

Instructions:

Put vegetable oil in a big pan or wok and heat it over medium-high heat


Dice the onion and carrots and stir-fry them in the pan for three to four minutes, until they start to get soft


Stir-fry for one more minute after adding the minced garlic


Move the vegetables to one side of the pan and add the cooked jasmine rice to the other side


Add the soy sauce to the rice and vegetables, then toss everything together


Put the vegan butter and thawed peas in the pan and stir them around until everything is hot


Add pepper and salt to taste


Before serving, sprinkle with chopped green onions

Sicilian Pizza

Sicilian pizza is a thick, square pizza known for its deliciously crispy crust and generous toppings. This homemade version is perfect for family gatherings and pizza nights. Customize it with your favorite toppings!

Ingredients:

  • 1 pound pizza dough

  • 2 tablespoons olive oil

  • 1 cup tomato sauce

  • 1 1/2 cups shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes optional

  • 1/4 cup sliced black olives

  • 1/4 cup sliced green bell peppers

  • 1/4 cup sliced red onions

  • 1/4 cup sliced pepperoni

  • Fresh basil leaves for garnish optional

Instructions:

Preheat your oven to 475F 245C and place a baking stone or pizza pan inside to heat up


Roll out the pizza dough on a lightly floured surface to fit your baking stone or pan


Brush olive oil over the surface of the dough to prevent it from getting soggy


Spread tomato sauce evenly over the dough, leaving a small border for the crust


Sprinkle mozzarella and Parmesan cheese over the sauce


Sprinkle oregano, garlic powder, salt, and pepper over the cheese


Add red pepper flakes if you like it spicy


Arrange black olives, green bell peppers, red onions, and pepperoni on top of the cheese


Carefully transfer the pizza to the preheated baking stone or pan


Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbly and slightly browned


Remove from the oven and let it cool for a few minutes before slicing


Garnish with fresh basil leaves if desired

Enjoy this Burrata, Prosciutto, and Basil Pizza, it's so tasty. Savory prosciutto, creamy burrata cheese, and fragrant basil all work together to make a pizza crust that makes your mouth water.

Ingredients:

  • 1 pizza dough

  • 1/2 cup pizza sauce

  • 8 oz burrata cheese, torn into pieces

  • 4 slices of prosciutto

  • 1/2 cup fresh basil leaves

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

Preheat your oven to 475F 245C


Roll out the pizza dough on a lightly floured surface to your desired thickness


Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper


Spread the pizza sauce evenly over the dough, leaving a small border around the edges for the crust


Evenly distribute the torn burrata cheese over the sauce

Easy White Choc Mocha

Indulge in the creamy sweetness of white chocolate combined with the boldness of espresso for a delightful homemade mocha experience.

Ingredients:

  • 1 shot espresso

  • 1/2 cup milk

  • 2 tablespoons white chocolate chips

  • Whipped cream

  • Ground cinnamon optional

Instructions:

Make a shot of coffee


Add milk and white chocolate chips to a saucepan


Heat the mixture until the chocolate melts and it gets hot


Mix the hot milk and chocolate together and pour it over the espresso
