Slow Cooker Cornish Game Hens with Grand Marnier Sauce

In this gluten-free slow cooker recipe, Grand Marnier sauce is mixed with tender Cornish game hens. It's great for a special event or a cozy dinner at home.

Ingredients:

  • 2 Cornish game hens, whole

  • 1 cup gluten-free chicken broth

  • 1/4 cup Grand Marnier liqueur

  • 2 tablespoons honey

  • 2 tablespoons gluten-free soy sauce

  • 1 tablespoon cornstarch

  • 1 tablespoon water

  • Salt and pepper to taste

  • Fresh parsley for garnish optional

Instructions:

Mix the Grand Marnier, honey, soy sauce, and chicken broth in a small bowl with a whisk


Put the Cornish game hens in the slow cooker and season them with salt and pepper


Pour the sauce over the chicken


Put the lid on top and set the heat to low


Cook for 6 to 8 hours, or until the chicken is fully cooked and soft


Take the hens out of the slow cooker and put them on a serving platter when they are done


To make a slurry, mix the cornstarch and water together in a small bowl


Put the liquid from the slow cooker into a saucepan


Set the pan over medium-low heat and simmer the liquid for a while


Slowly whisk in the cornstarch slurry until the sauce gets thicker, which should take about two to three minutes


Cover the Cornish game hens with the sauce


If you want, you can add fresh parsley as a garnish and serve

Salted Caramel Blackberry Brownies

Ingredients:

  • 1 cup all-purpose flour

  • 3/4 cup unsweetened cocoa powder

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup unsalted butter

  • 1 1/2 cups granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup blackberries

  • 1/2 cup salted caramel sauce

Instructions:

Preheat oven to 350F 175C


Grease and flour a 9x13 inch baking pan


In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt


In a large saucepan, melt butter over medium heat


Remove from heat and stir in sugar, eggs, and vanilla until well combined


Mix in the dry ingredients until just incorporated


Fold in blackberries gently


Pour half of the batter into the prepared baking pan, then drizzle half of the caramel sauce on top


Repeat with remaining batter and caramel sauce


Using a knife or toothpick, swirl the caramel into the batter to create a marbled effect


Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached


Allow brownies to cool completely in the pan on a wire rack before cutting into squares

Ingredients:

  • 1 cup grapefruit juice

  • 1/4 cup lime juice

  • 2 tablespoons honey

  • 1/4 teaspoon salt

  • 2 cups sparkling water

  • Ice cubes

  • Grapefruit slices, for garnish

  • Lime slices, for garnish

  • Coarse salt, for rimming glasses

Instructions:

In a pitcher, combine grapefruit juice, lime juice, honey, and salt


Stir until honey is dissolved


Add sparkling water and stir gently to combine

These Greek Chicken Bites are full of Mediterranean flavors and make a quick and tasty dinner during the week. These chicken bites are baked until juicy after being marinated in a mix of olive oil, herbs, and lemon juice. They are served with a yogurt and feta cheese dip.

Ingredients:

  • 1 lb chicken breast, diced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lemon

  • 1/4 cup plain yogurt

  • 1/4 cup crumbled feta cheese

Instructions:

Put garlic powder, salt, pepper, lemon juice, olive oil, and dried oregano and thyme in a bowl


Toss the diced chicken in the marinade to coat it


Let it sit for at least 30 minutes


Get the oven ready by heating it up to 400F 200C


Put chicken skewers that have been marinated on a baking sheet that has been lined with parchment paper


Stick it in the oven for 15 to 20 minutes, or until the chicken is done and has a little brown on it


As a side, serve it hot with plain yogurt that has crumbled feta cheese on top

S'mores Mocha Marshmallows

These S'mores Mocha Marshmallows are the perfect sweet treat to elevate your hot chocolate or coffee experience. They're infused with coffee and cocoa flavors and topped with mini chocolate chips, graham crackers, and marshmallows, reminiscent of classic S'mores. Enjoy them by themselves or in your favorite mocha beverage!

Ingredients:

  • 3/4 cup granulated sugar

  • 1/2 cup light corn syrup

  • 1/4 cup water

  • 3 packets unflavored gelatin about 2

  • 5 tablespoons

  • 1/4 cup unsweetened cocoa powder

  • 2 tablespoons instant coffee granules

  • 1/4 cup powdered sugar

  • 1/4 cup cornstarch

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup mini chocolate chips

  • 1/2 cup crushed graham crackers

  • 1/2 cup mini marshmallows

Instructions:

Mix the cocoa powder, cornstarch, and powdered sugar together in a small bowl


Blend thoroughly and reserve for a later time


Add the water, corn syrup, and granulated sugar to a saucepan


Stir over medium heat until a candy thermometer registers 240F 115C in the mixture


This should take seven or eight minutes


In a different mixing bowl, sprinkle the gelatin over 1/2 cup of cold water while the sugar mixture is heating


Give it some time to blossom by letting it sit


Take the sugar mixture off the heat and carefully pour it over the gelatin mixture once it reaches the desired temperature


Mix the gelatin until it dissolves completely


Beat the sugar and gelatin mixture on high speed for 10 to 12 minutes, or until stiff peaks form, using a stand mixer or hand mixer


To the marshmallow mixture, add the vanilla extract, salt, and instant coffee granules


Beat continuously until all the ingredients are well combined


Apply grease to a 9 x 9-inch 23 x 23 cm baking pan and then sprinkle the previously made cocoa powder mixture over it


Evenly distribute the marshmallow mixture after pouring it into the pan


Top with mini marshmallows, crushed graham crackers, and chocolate chips


Allow the marshmallows to cure for at least four hours, or over night, at room temperature


After the marshmallows have set, cut them into squares using a sharp knife that has been brushed with some of the cocoa powder mixture


Enjoy them on their own or as a delightful addition to your S'mores Mocha!

Remove the foil and sprinkle breadcrumbs over the top if desired


Return to the oven and bake for an additional 15 minutes, or until the vegetables are tender and the top is golden brown


Serve hot, garnished with extra fresh herbs if desired

Spicy Grilled Cheese

  • 1 lb ground beef

  • 4 hamburger buns

Instructions:

Preheat your air fryer to 375F 190C


While the air fryer is preheating, divide the ground beef into 4 equal portions and shape them into burger patties


Season each patty with salt and black pepper on both sides


Place the burger patties in the air fryer basket, making sure to leave some space between them


Cook the patties in the air fryer for 10-12 minutes, flipping them halfway through for even cooking


Add an extra 1-2 minutes if you prefer well-done burgers


During the last 2 minutes of cooking, add a slice of cheese on top of each patty and let it melt


While the burgers are cooking, lightly toast the hamburger buns in a toaster or the air fryer for about 1-2 minutes


Once the burgers are cooked and the cheese is melted, assemble your hamburgers


Place lettuce leaves, tomato slices, and onion slices on the bottom bun, followed by the burger patty with melted cheese


Add ketchup and mustard if desired, then top with the other half of the bun

  • 1 whole chicken, about 4-5 pounds, cleaned and giblets removed

  • 8 cups chicken broth

  • 3 celery stalks, sliced

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

Blackberry Oat Crumb Bars

Ingredients:

  • 2 cups gluten-free rolled oats

  • 1 cup almond flour

  • 1/2 cup coconut sugar

  • 1/4 teaspoon salt

  • 1/2 cup vegan butter, melted

  • 2 cups fresh blackberries

  • 1/4 cup maple syrup

  • 1 tablespoon cornstarch

Instructions:

Start by heating the oven to 350F 175C


Line an 8x8-inch baking pan with parchment paper, leaving two sides of the paper hanging over the edges


Grease the pan


Rolling oats, almond flour, coconut sugar, and salt should all be mixed together in a bowl


Add the vegan butter that has been melted and mix it in well


Make a flat layer with two-thirds of the oat mixture in the bottom of the baking pan that has been prepared


The last third should be saved for the crumble topping


Toss the blackberries, maple syrup, and cornstarch together gently in a different bowl until the berries are all covered


Place the blackberry mixture on top of the oatmeal in the baking pan


Spread the oat mixture you saved out evenly over the blackberries to make a crumble topping


Place in an oven that has already been heated and bake for 35 to 40 minutes, or until the topping is golden brown and the blackberry filling starts to bubble


Take it out of the oven and put a wire rack in the pan so it can cool all the way down


After the bars have cooled, use the extra parchment paper to lift them out of the pan


Serve it cut up into squares
